Lemon & cream cheese muffins

Recipe: From Sally Mitchell

Muffins 

  • 110g cream cheese

  • 1 1/2 cups flour

  • Grated rind of 1 lemon

  • 1 egg

  • 1/2 cup, plus 1 tsp, oil

  • 1/2 cup milk

  • 2/3 cup sugar

  • 1 1/2 tsp baking powder

  • 1/2 tsp salt

Topping

  • 2 tbsp fresh lemon juice

  • 1 tbsp sugar


Method

  • Pre heat oven to 190 C. Cut the cream cheese into small pieces , mix with 2 tablespoons of flour & grate lemon rind into the mixture.

  • Add the rest of the dry ingredients and stir. Combine the wet ingredients in another bowl and then add to the dry ingredients. Mix until just combined & spoon into greased muffin pans.

  • Bake for 20-25 mins.


To make topping, mix to form lemon sugar. Sprinkle over warm muffins.
