Lemon & cream cheese muffins

Muffins
110g cream cheese
1 1/2 cups flour
Grated rind of 1 lemon
1 egg
1/2 cup, plus 1 tsp, oil
1/2 cup milk
2/3 cup sugar
1 1/2 tsp baking powder
1/2 tsp salt
Topping
2 tbsp fresh lemon juice
1 tbsp sugar
Method
Pre heat oven to 190 C. Cut the cream cheese into small pieces , mix with 2 tablespoons of flour & grate lemon rind into the mixture.
Add the rest of the dry ingredients and stir. Combine the wet ingredients in another bowl and then add to the dry ingredients. Mix until just combined & spoon into greased muffin pans.
Bake for 20-25 mins.
To make topping, mix to form lemon sugar. Sprinkle over warm muffins.
