Sorrel is a leafy green herb with a bright, tart, and acidic flavor profile best described as "lemon spinach" or a sour green apple. Its distinct sour tang—caused by oxalic acid—adds a sharp citrus-like punch to salads, soups, and curries.
 
 
 Raw leaves are tender and similar in feel to baby spinach, though larger mature leaves can become slightly fibrous. 
 
 
 Cooking mellows the sourness significantly, melting the leaves down into a smooth, tangy purée that complements creamy dishes, fish, and soups.
