I am a shiitake mushroom. I am the most widely used and known of the exotic mushroom varieties. I have a meaty flesh and distinct earthy tone. I am best sautéed as a base for stir-fries, omelettes and barbecued. I pair well with a wide variety of dishes.

I made this dish: Mixed Mushroom Ragu with homemade pasta and - oh my goodness - it was delicious. I used a combo of Shitake, Enoki and Oyster mushrooms.
